Peking Pork Pasta Salad

2 pounds pork tenderloin, cut into 1/4-inch thick slices
1 teaspoon CARAPELLI® light olive oil
1/4 cup HOUSE OF TSANG® low sodium soy sauce 1/4 cup sherry
1/2 teaspoon HOUSE OF TSANG® sesame seed oil
4 cups cooked rotini pasta 1 cup sliced green onion
1/2 cup chopped green bell pepper
3 cups fresh spinach leaves
1/4 cup toasted, sliced almond

In large skillet over medium-high heat, sauté pork in oil 2 to 3 minutes or until no longer pink. Chill. In small bowl, combine soy sauce, sherry, and sesame seed oil. In bowl, combine pasta, green onion, and bell pepper. Place spinach in large serving bowl. Top with pasta mixture and pork. Sprinkle with almonds. Serve with dressing.

Serves 8.
